30 ml Amarula
60 ml green melon syrup (see recipe below)
30 ml white rum
Green melon, cut into slivers
Combine all ingredients in a cocktail shaker, blender or sealed container. Pour into a deep-stemmed or martini glass and garnish with a two slivers of green melon.
Green melon syrup
750 ml water
250 g sugar
Half a green melon, peeled, seeded and cut into chunks
Boil all the ingredients together for 20 minutes and remove the melon pieces. The remaining liquid in the pot is the green melon syrup.
